This delicate and refined sparkling rosé blends Chardonnay, Chenin Blanc, and Pinot Noir. Aromas of honeysuckle, peach and apricot give way to grapefruit and blood orange on the palate. Limoux in southwest France is where sparkling wines were first discovered, quite on accident and attributed to the confluence of oceanic and Mediterranean climates. Low temperatures in early autumn would stop the fermentation, until it restarted in spring, producing bubbles. That secondary fermentation is what makes these wines sparkle!
