The dry, high elevation terroir of Monteviejo provides a purity and intensity of sunlight for perfect ripening of the grapes. Cool nights preserve the acidity and prevent over-ripening. Once in the hands of the winemaker, the wine is vinified in 225 liter French oak barrels with indigenous yeasts. Aging occurs for 16-22 months in new French oak, then a minimum of 6 months in bottle prior to release. The result is a wine for aging. Complex aromas of violets and red fruits develop into an expansive palate with a long finish.
