The Ploussard grapes that make this wine are grown on vines that are over 35 years old. Hand-harvested grapes are destemmed before fermentation with indigenous yeasts. Malolactic fermentation and aging in large oak foudre takes place with no fining. This wine has good tannic structure despite its light color.
