The Donati wines are such a treat when you want to get off the beaten path of sparkling wines and interesting varieties.  This Trebbiano is an awesome example of exciting process and farming - organic, skin contact, native yeasts, and spritely bubbles.  We love the savory and saline notes in this wine, but the bright fruit and herbal notes really make it outstanding and immensely interesting.  This Trebbiano is perfect for all of the appetizers you can throw at it!
